Packing the fridge with powerful salads that can be a great lunch or quick side dish at dinner is a great way to stay on track with healthy eating and take stress off at meal time! My Quinoa Salad from “Skinny Southern” is a perfect addition to your fridge!
Quinoa Salad
1 cup cooked quinoa
1 medium cucumber seeded and chopped
1 cup chopped grape tomatoes
1 red and 1 green bell peppers chopped
1 red onion diced finely
1 cup Kalamata olive halved
6 ounces feta cheese
¼ cup olive oil
¼ cup white balsamic vinegar
½ tsp. dried oregano
1 tsp. honey
½ tsp. coarse salt
½. tsp. black pepper
Cook quinoa according to package directions and allow it to cool. Toss
the quinoa, cucumber, tomatoes, onion, peppers, olives, and feta in a
large bowl. Mix the olive oil, vinegar, oregano, honey, salt, and pepper
together to make the dressing and pour over the salad. Top with your
choice of meat or eat plain.
